Simple economics

My solution is very simple. If a job is worth doing, then it's worth getting enough to survive on.

A job is worth what an employer is willing to pay, and an employee is willing to accept.

How can anyone make the ludicrous claim, that, "this job simply doesn't justify a higher wage, when the company would immediately go out of business without that job?

Because: A job is worth what an employer is willing to pay, and an employee is willing to accept.

Taking your argument to the logical extreme, then employees could demand $100/hour, because Walmart would go out of business without its employees.
