Specific question only about the usefulness of Wifi on the Canon 6D

Peer-to-peer connection

I think you are mistaken about how things work in the (just brand new) world of camera WiFi. There are systems, like CamRanger, usable with most Canon cameras, that enable connectivity directly between camera and iPad/iPhone/Android systems, no routers involved, just peer-to-peer. So you can set it up drive the camera from tablet or transfer files practically im the middle of nowhere.

The same is true of the Panasonic GH-3, it can connect via WiFi to a tablet or smart phone, peer-to-peer, no router involved.

I don't know exactly what happens in the 6D world, but I don't expect that anything you wrote really applies in that case, as well.
