Fuji S5 RAW / jpeg and Aperture

I recently picked up a Fuji S5 Pro after using a Nikon D50 for 7 years - one of the reasons being better OOC jpegs on Fuji compared to other brands. Also wanted to use my existing Nikon lenses and flash - one reason I didn't go with something like an X-E1.

Had a few questions for members of this forum:

How often you shoot in RAW (or RAF) rather than jpeg? In what kind of situations do you see that the PP work on a RAF is worth the extra effort?

Do you get the dynamic range advantage with DR400% while shooting jpeg or do you need RAFs?

Do you really need Fuji's software to take full advantage of the RAFs? Has anyone had good experience with Apple's Aperture?
