really stupid question but im really new to all this, if i used a adapter and other lens when i focused on something would my camera still zoom in to see if i had correctly focused to where i wanted it to be? not sure if i explained that right, just hard to see if your focus is correct on a wee screen without the zoom in on the focus wouldnt want to lose that ability with a adapter etc

Not automatically, you have to press a button, the OK button, and the camera zooms in so you can focus.  The amount it zooms in is configurable in the menus. On the NX you can only zoom into the center spot with manual lenses.

As a side point, for 30mm f/2 or 20mm f/2.8, you are probably going to be cheaper going with genuine Samsung lenses. The savings are mostly for the 40mm and up lenses. Plus, it is fun to shoot with old manual lenses.
