I took a trip to many of the places you list earlier this year. I was traveling light, so I took just the D5100 with the 18-105 lens. There were only a few times I wished I had a faster lens. For 98% of my shots the 18-105 was perfectly adequate. The high ISO capabilities of the D5100 saved me in several indoor situations. As BostonAaron stated, you can take several shots and stitch them together post.

One of the other people in our group had a Canon full-frame setup with multiple lenses, but had to dedicate an entire backpack to his photo gear. I had one small holster bag for my camera. I would say he got some great shots that I couldn't get with my camera, but to me they weren't shots I would have taken anyway even if I had the gear with me.
