If you don't want to post process your photos, then your only option is in-camera control. Personally, I prefer to keep the noise control on my cameras set all the way down so I can get the sharpest image possible. Then, if I need to reduce noise I will do it in post processing. Most of the time, I just use the noise reduction in Lightroom or Photoshop (Noiseware Pro plugin). If you are comfortable using programs that layer and mask, you can always apply noise reduction selectively. I would say I only do selective noise reduction in a small percentage of the my photos.
