It's usually the other way around: White card for custom WB. Gray card may or may not be colour-neutral, depending on the manufacturer - to be used for exposure but not necessarily WB. It sounds like your card is neutral.

You can experiment - see if the custom WB you get from the white card is the same as from the gray card. If they differ, use the one you like best.

And what about black card?

Used in post-processing to set the black point (Blacks slider in ACR, or the Black Point eyedropper in a Curves or Levels adjustment layer). I find, though, that it is usually too strong an adjustment for my tastes.
