He can't know it because it's not true. Those lenses have a diagonal AOV of about 45 degrees. Our eyes each have an AOV of over 120 degrees horizontally, a bit less vertically. Both eyes together cover a horizontal AOV of about 220 degrees.

Here's an experiment I did. I put my camera on a tripod at eye level with an 8-16 lens at 8mm. I found an obvious centre target and looked at it, then without moving my head or eyes noted the extreme range of my vision each side. I took two shots with their edges at those extremes and merged them. I also noted where my upper and lower limits were and roughly how I lost resolution away from the centre. Here's the result.

But that's not what I saw in crisp detail. After trying various lenses the best impression of what I really saw fully is this: portrait orientation at 70mm.
