As to "proper" exposure. Looking at the corresponding histogram, the distribution of tones should show dark tones, light tones, and mid tones, ideally (but almost never achieved) in a mountain-like shape, with fewer tones at the dark and light ends of the scale. What has to be avoided absolitely are high peaks at the dark and light ends, resulting in clipping, shown as "blinkies" in the histogram in playback mode.
