I think you are seeing more consistent results and better images from D700 owners, because most D700 owners are talented professionals/enthusiasts who have had their camera for a time now, and they know exactly how to use it.

Many D600/800s were picked up by less experienced people or people new to the DSRL world, while many pros still hold on to their D700.

I think the D800 is (must be) a better camera. But the slight difference between these pro cameras is nothing compared to the difference between the level of expertise of the photographers.

A pro make better photos with a Cooplix than I do with my pro DSRL body.
