Gear of choice for stiched mountain panorama's?

There are free binaries for Hugin, an Open Source stitcher. If the overlaps are reasonable it is pretty much what you asked for - load N images and it figures it all out. It evens out exposure, picks what it thinks is level, selects an appropriate projection, and crops automatically - you can use the GUI to override the choices it has made. It looks a bit intimidating, but on full auto its very easy. You can also mask off things to be excluded from overlaps - so you can remove unwanted items/people etc. See
