I'd think a prime that's very sharp edge to edge and that exhibits little light falloff in the corners would be the best path. I'd also think a short to medium tele lens and taking LOTS of frames per panorama will yield the highest level of detail and reduce the need for perspective correction.

An E-M5 with the 45 or perhaps even the 70, if you have the budget, should create terrific panos requiring relatively little fiddling. I've done a few, just playing around--not done in a careful fashion--using it and the 12-50 kit zoom and if I look carefully there's evidence of uneven exposure across the individual frames.
