When you say "flat as a napkin" I assume you mean completely blown out? I would pay attention to how the image looks after you shoot and adjust the exposure if needed. You can't expect one kind of metering to work in every situation. Use the info button to review the image, checking the histogram and blinkies. After a few shots you will know what you need for a particular direction on a given day. After living with your camera for longer you will have to do less of this intensive review.

Whether you use center weighted, center or average really doesn't matter. It matters much more that you learn what to expect as you point the camera at something using your preferred metering method.
