Either based on viewing distance, or...

You can set your circle of confusion based on viewing distance,
as others have stated, or you can try to retain pixel level sharpness.

In the second case, you need to know the pixel size of the DPxM
which is 0.005mm.

In my experience, a circle of confusion of about 0.008mm (+/- 0.002mm)
will give you results for retaining pixel level sharpness.
