Assuming there's the space, simply replacing the sensor on the S110 with a Sony sized one would be a big problem - the larger sensor would have serious vignetting from the lens. So, they need to replace the lens. By the time you'be made those two changes, you have to change the body. By the time you've done that, there wouldn't be much left from where they started.
