Yeah, definitely agree. I took a few rolls of film with my old cameras and had them scanned to CD, resolution was awful, this was from cameras that I know produce great images when processed in the darkroom.

Do any art schools still teach film photography these days? (I had SO much fun in the B/W photography course at art college.)

Perhaps an option for the original poster would be taking a course or even just renting some darkroom time at an art school if possible, to learn film processing and darkroom printing? The BEST way to learn is to do everything yourself...
