How the heck do pro photogs make shots look like this?

Hey guys,

So I'm a little perplexed! I've recently been flicking through some pro photogs folios to amazement. While obviously, it's obvious that 90% of the work is the talent of the individual, I don't understand how they have one thing in common: The photos don't look like "anything else" that would be shot using a standard camera or point in shoot (ok, very low level) in that same circumstance.

I'll give you some examples:

This is just some random guy photographing a guy on a beach with a tat:

See what I mean so far? ... ok. One more.

Ok, I pushed that a little bit- but seriously!! How do the pros get their pics looking so.. Everything.. The lighting.. The.. Looks "smooooth", contrasty.. Everything!! Am i going insane? Is it presets? Is it the camera? Cos I know Dana, above, for example - uses a Hasselblad.
