Agreed one can get carried away in post (I prefer the act of capturing the image). ..one should always capture maximum dynamic range (depends on scene and intent). Yes ETTR (expose to the right) as you have more signal to noise but watch highlights (also know camera). RAW gives the greatest post processing options. Work with best "source" material for post. It is easy to go over the top and let the image get out of hand. But the tools and the number of pixels to work with continues to amaze me.
