What you do (and what every photographer basically does) is keep every shot you take, and back it up a few times as well. That costs a LOT of money actually. I too have a big NAS, database software, etcetera, and especially when upgrading/renewing computer/NAS/software, it takes a LOT of time...

What a photographer probably should do, is give a DVD to their clients and tell them to take good care of it, because everything will be deleted ASAP, UNLESS the client actually PAYS for archiving.

Your storage (and time) needs will go down a lot, and what is left will be a money-maker.
