Ya, I feel your pain.  I have used a large clear plastic garbage bag to change in when I am out on a road somewhere where there is a lot of dust, and I just bring a new one each time.  I am not in a really dry area, so I haven't had any problem with static attracting dust to the plastic.  I always point the camera down when changing and always have the next lens ready with rear cap ajar so I can flick it off and screw the lens on facing down.  The kind of dust I get doing this and not changing too often can sometimes be blown away.  It's weird that not much has changed even though the process is so different - I always remember the dust problems in the darkroom and how I washed my hands so much with cold water to remove any oil and close the pores so more wouldn't come from my fingers before I was finished printing negatives.  It's funny that the dust and oil artifacts haven't left us!
