Highlight tone priority is what you are thinking of, though I always have it off, and shoot RAW and develop my own JPEGs, which is the best way to get the best from your camera.  Reading the manual and understanding everything is also a good thing.  

The rebel isn't just a point and shoot on steroids, it's a full featured inexpensive DLSR, a lot to know about these cameras.  Not saying OP doesn't know anything, could be a faulty camera, but most of the time it's not.
