There is no RAW processing on iOS, all the programs just use the embedded JPEG file for editing.  I think they can hold the RAW file for transfer back to the computer later.

So every RAW file has a preview image that is embedded in it (what you see on the camera for review).  These are usually reduced resolution and quality vs a full quality JPEG.

If you are going to image edit on an iOS device you might shoot RAW+ and transfer just the JPEG files to it.

For editing I use iPhoto right now, it is fine for social sharing, etc.  I haven't tried much else though.
