My eyesight is also poor. My glasses allow me to see at distance rather sharply, except for chromatic aberration as well as significant lens flare in high contrast scenes.  My glasses are line-less bifocals, which allows me to read, although not as comfortably as I did in my youth.

I do see the three-color histogram, which is important, and the menus. Because of my glasses, framing can be difficult on my crop-sensor camera, and so I do check framing on the LCD, and sometimes focus after zooming in on the image.

I rely on seeing my images on the computer afterwards, and based on this experience, I tend to take more photos of the same image to account for imprecision of focus and tripod shake.
