RAM is cheap - 8GB should be enough for average image editing.  If you use memory hungry applications such as virtual machines or you do large scale image stitching like I do, then you'll want a lot more.  I open up to 120 36P images at once in CS6 and do batch adjustments in ACR and then stitch them in the gigapixel size images and edit them as huge .PSB images  - and butn up 24GB in a heartbeat and could really use 32-64GB or RAM, but I am on the extreme end of users
