There are relatively cheap adapters for G lenses. Examples:

So how does this work? How to you chose f/5.6 for example?

I haven't tried this in a while because it didn't seem worth trying to adapt my G lenses, but IIRC you can't choose a specific aperture but just stop down using the built-in aperture, with the lens wide open. This gives you crude aperture control.

The biggest problem I've had with the cheap adapters is that they all focus past infinity, making the infinity stop on the lens useless. I did play around with shimming them so they stop at infinity, but it seemed like more bother than it was worth.
