I think composition is the key. You can even completely isolate the subject from the background (like in the example below), but of course you're right: If the conditions will not be good for bokeh you won't be able to achieve it no matter what you try with the lens/camera.

As much as I love my manual lenses, I would love to get a 18-200mm. If I did, I doubt it would come off much.

I've just done a quick test and it seems that it was the filter I had on it (for protection, I'm paranoid and clumsy...).  I'm very happy to know that the lens is even better than I thought
