The D800 will handle thousands and thousands of speed lights.
Dive into the menu on each of your three SB-800s and set them to SU-4 mode. That will cause them to be triggered optically by the pop-up flash (or a hot shoe mounted flash). Set the pop-up flash to manual and 1/128 and use the Nikon infra-red attachment to block the flash from affecting the image if needed. If using a hot shoe mounted flash, simply turn it backwards.
Then set each of the SB-800s as 'Remotes' and adjust settings manually as the product lighting dictates...and voila!
