Remember, to manual white balace and overexpose by 1 or 2 stops and you should be set. As you say, if in doubt, bracket.

Oh, one more thing, he has it backwards about condensation as you will know living in Florida (as do I). Take a cold camera (air conditioned car in our FL case) into a warm environment and you will get condensation. I use zip lock bags with as much air as I can push out to seal the camera until at ambient.
