For a print that size, shooting raw is highly recommended. If you convert the raw image in Adobe Camera Raw, you have the option of increasing the file size beyond the camera's native resolution. You can also use programs such as Genuine Fractals or Qimage to uprez the file.

But the resolution you need to print is really dependent on the output device and medium. For a canvas print, you really only need 100 dpi. The RIPs used by professional printers may be capable of uprezing your file better than you can, so you might want to check with them. You can test by making your file the size of the big print, then cropping an 8x10 portion and having that printed.
