I'd start off with 52mm Canon 500D, it has an interesting focal range range of 35-55cm at medium to higher zoom levels, that's good for a lot of macro situations.

Then maybe later a Canon 250D for the lower range up to 25cm, and maybe a (cheap!) Sigma Achromatic lens to expand to further away.

Anyway, if you get two inexpensive adapter rings 52-49mm and 52-55mm you'll be fine for most of the lenses to come ...
