That's because:

1. it doesn't work for anything even slightly complicated.

2. It takes G-R-E-A-T--E-F-F-O-R-T to pronounce things clearly enough, and speak in a simple enough subset of language for those things to work beyond simple "Yes"/"No"/"Light on"/"John Smith".

Who wants to screw around with a touch interface in the bathroom for example.

One would expect that the opposite -- large levers, gesture recognition -- would be used in those situations, but marketing people who "design" those things are just too stupid to think of anything that is not an iPad knockoff.
