Since I habitually shoot JPEGs, I sometimes wonder if Canon has put a skin-softening algorythm in the DIGIC. Not sure if RAW skin (so to speak) has the same quality. My old 1D original reproduces very crisp skin tone, not always flattering.

Yep that's the iContrast removing the blue spectrum, which creates shaping, making skin have depth and to appear 3D with light and dark. The skin colour is pretty consistent across the whole face and therefore appears very flat and without dimension.
