I can not comment on the Canon lenses, never had a Canon DSLR and also never had a D700. Never the less, I am pretty sure that every system has nice lenses, not just Olympus, but if you are convinced about the Olympus being better than anything else, well... that's fine by me. However, I am still looking for the images which couldn't have been taken with anything other than a certain lens and a certain camera brand. I don't think I will ever find such image.

I agree with you fully, and never said otherwise. There are indeed some unique types of systems, such as large format cameras with lens movements on very wide angle + shallow DOF lenses, that are not possible with small-format SLRs, but for the most part, it's 99% the photographer's vision - not the camera.
