Complexity = unreliability

RAID has nothing to do with backup, and is not a substitute for backup. It is a way to keep multi-disk online systems running fast, and online 24/7 during maintenance.

Keep everything that is current on one internal drive, or on one SSD+HDD combo if HDDs are too slow for you. That is a much better solution than RAID unless you are running a multi-disk 24/7 real-time environment.

Back up the whole system incrementally to an external drive once a day, background/automated. Anything that requires manual intervention is much more risky in the long run, and unnecessary.
