I do not think one is visibly sharper than the other at the long end (I own both). Sharpness at the long end is usually determined in practice by factors other than the intrinsic optical quality of the lens, anyway.  At the speeds I use to shoot BIF stabilization makes no positive difference (it might make a negative one).  The 75-300 focuses noticeably faster than the 100-300, hence I think it is a better choice.
