I agree with B7W Jpeg and Raw advice. Setting the camera to B&W offers a nice feedback while shooting.

On the other hand, I have never gotten used to the way digital camera's or simple desaturation of raw's in PP translated colours to B&W. Coming from 30 years of B&W film, I usually find skintones too bright, sky's too dark and did not like the hard high high light roll off into white. So I always use the raws to make my own conversion. In photoshop, there is a special tool for B&W conversion that allows adjustment of separate colours into B&W; I darken the reds, light up the blue's and soften the highlights.
