I am in the same position as you, considering parting with my Tamron 70-300 VC and getting the 70-200 f/4. I agree with you on "flat" images, especially at the long end. I think it is due somewhat to aoftness but mostly due more muted color rendition and contrast.

I honestly almost never use the Tamron and I own the 24-120 which makes the 70-200 less enticing due to the large overlap and less reach than my Tamron. I may wait for the 300 f/4 VR instead altough the 70-200 f/4 will be very tempting in order to complete my "Trinity Lite" and I can see where the option of using 16-35, 50, and 70-200 combo or just the 24-120 for when i don't want to bring extra lenses would be very appealing. The 300 would be nice when I need the reach ( which is very rare for me right now).

It seems I am not the only one...

Funny enough, I have the 24-120/4 just like you. I sold the 24-70G because the 24-120/4 is so much more practical for my use (VR + longer reach vs. F2.8).  I am with you that with the 120mm end, justify the 70-200mm is no longer easy.  I too prefer a 100-300mm/4 VRIII, and If I were the head of Nikon product, that is what I will focus on.
