The only internal part that was user-upgradable on the previous 21.5" and 27" iMacs was the RAM, which you could get at via a small hatch, without cracking open the entire case.  That didn't stop some people and companies from going inside the case to play around with the drive bays (optical, HD, and (on some machines) SSD) or to bring SATA connections for those bays out, as eSATA.  But anyone who upgraded the machines that way, did so at their own risk.

It sounds like with the new iMacs, the only user-upgradable part on the 27" one is the RAM (as before), while the 21.5" model might not have any "officially" user-upgradable internal parts at all.  Also, there's the question of whether the 21.5" model can accept as much RAM as the 27" one.  Maybe this time around, it can't.
