Just my suggestion.  You can take it for what it is worth.

I would definitely have 2 bodies to shoot any event.  Weddings are even tougher on equipment so 2 is a minimum.  They don't have to all be the latest greatest however.  I shoot with my older 30D and as a backup a 10D - old to say the least.  But still very capable.

I keep my 50mm 1.8 on the 10D and use a zoom on my 30D 17-40L.  This gives me the flexibility when shooting small or larger groups.

I do also have a 28-135 that I will put on my 10D to give me some reach.

Lastly, gasp, I use a P&S Olympus XZ-1 for my detail shots.  It has a super macro mode that is great.

I have both studio and portable lights for the wedding, formals, and reception.  I try to shoot all of them off camera.

I definitely would not hold back because you think you may not have the latest equipment.  You do want to make sure that you have backups though so given a choice between 1 5D Mark3 and two or three Rebels, I would go the Rebel route.
