As far as the camera shake is concerned, the resolution does not make it any different (when compared at the same print/view size)

Things like mirror slap and shutter, depending on their construction, can increase the camera shake.

D600 has slightly slower shutter, so there is potential for less shake, but the D800 is heavier, which also means less shake.

And the most important factor are your hands.

So, unless you want to watch your pictures at 1:1 magnification (which for D800 means bigger image than for D600), you do not have to worry about which camera is better for handheld.

I love the extra resolution the D800 provides, even handheld, and you will love it as well.

So, unless the weight, price and file size of the D800 does bother you, get the D800 with better resolution, higher flash sync speed, and better ergonomics (besides U1,U2 banks).

Otherwise, get the D600, and enjoy it.
