4" × 6": 3:2 (1.5)
4.5" × 6": 4:3 (1.33)
5" × 7": 7:5 (1.4)
8" × 10": 5:4 (1.25)
11" × 14": 14:11 (1.27)

Hence for 8" × 10" and 11" × 14", the 4:3 would require less cropping than the 3:2.

I just use the default 3:2 and adjust the composition in the viewfinder to allow for cropping while PP.  Been doing this since using film SLR's.

If you set the 60D to 4:3, you would have to use the LCD display to see the image being captured.
