I know that Nikon has a wireless system BUILT IN than can control their speedlights...can canon do the same?

Canon can do the same (have built-in wireless flash control).  The have done so with the several recent models.  They chose not to with the 5D II and III.  Part of that decision was likely related to chosing not to include a built-in speedlite.

Wireless flash control is enabled with a controller mounted in the hotshoe, either the ST-E2 or -E3 controllers, or any of MR-14EX, MT-24EX, 550EX, 580EX, 580EX II, or 600EX.  With the latest models (ST-E3, 580EX II, 600EX) the wireless settings can be set in the camera's flash control menu.

The 5D II and III do include a PC Sync connector for firing studio strobes or other speedlites.
