It's an indication of the minimum overlap that is required for the camera to be able to combine the images in the panorama. I just ignore this grayed out part and try to move the camera as horizontal as possible.

The easiest way to have a perfect horizontal movement is of course by using a tripod as suggested in a post a bit lower. This doesn't need to be a pano head, any lightweight tripod (or monopod for that matter) will be of great help too. The pano head will help the camera to create the perfect alignment, but some distortion when calculating the panorama could still occur, depending on the algorithm Sony implemented.

But as with most things: practice makes perfect!
