Which is better? A Nikon D600 or D800? Mostly using it HANDHELD & with low light.

I guess I am at a loss to understand that everything else being equal (technique, etc), the D600 will produce a better image since it has the lesser resolution sensor.  Given that logic, a D700 would be better at 12 MP and a D100 should be even better at 6 MP.

You are correct, in this case.

The term 'more forgiving' is being both mis-used and misunderstood.  It doesn't mean that the lower-res sensor somehow resolves more, or looks any better than the higher-res sensor.  It may mean, depending on your aesthetic,  that your 100% pixel-peeping may be less satisfying if you'd rather see resolution loss than (occasional) detail blur at the same magnification levels.  To me, the former looks worse than the latter - YMMV.
