I've used both D700 and D600. Bottom line is:

D700: significantly better (and heavier) body and controls

D600: significantly better sensor and image quality

I ended up selling my D700 and buying a D600, the image quality (especially dynamic range) really make the D700 feel like 5 year old sensor technology.

Biggest surprise is that I can shoot JPEGs with D600 that are much better and more malleable in Photoshop than D700 RAW files.  This means that I can shoot at lower resolutions in the D600 than 24MP  RAW (eg. L, M and SM JPEG sizes) and still beat the D700 in image quality (You can open JPEGs in ACR by selecting "Open in Camera RAW" and they look and feel just like images shot in RAW. Note: still no support for D600 RAW files in ACR so I expect image quality will be even better once Adobe releases update and you can open D600 RAW files directly in ACR)
