In my experience, Canon has more aggressive processing (depending on which camera) than Nikon, whose processing is usually on the conservative side, which is why I use RAW and process in ACR for superior results. I think Canon uses more aggressive processing specifically for comparisons like these because they know most people are content with better looking JPEGs and not necessarily into processing RAW files.
