You make great photos. I hope you buy both cameras one day and share more with us.

If you use mostly adapted M lenses there is no advantage in having the OVF, so the EX1 with its better EVF is clearly the winner. When choosing lenses dont'worry too much about max aperture, unless you care much about out of focus backgrounds. Fuji high ISO is so good that even a 5.6 lens is adequate: with the Voigtlander 25mm/4 you'll never be in trouble. And it's a very good lens for hyperfocal street photography.

This was my initial thought when the EX1 was announced... and I should go with my gut reaction -- matter of fact, when I read about the EX1 the first time, I thought, " finally the perfect camera!"... so I need to stick with that decision I think

The difference in apertures is the reason I'm having a problem deciding between the 25mm and 28mm. I'd rather an f/2 lens, however, the small size and focal length of the 25 are probably better for me. Of course, the 25 is cheap enough that there's probably no downside is going that way first and if I decide I want the 28 later, not a huge deal. I also have an M8 and film rangefinder that either/both lenses will work well on.
