I would take:
both bodies E-M5 and E-PL3
12mm, 45mm, 100-300mm

I would mount the 12mm on the E-M5, the 45mm on the E-PL3, and keep the 100-300 zoom "nearby" - in the car, or perhaps in a bag.

Depending on where I was planning to be for the day, I might interchange
the lenses on the two bodies.

But, clearly this is a matter of taste. You bought those other lenses for perfectly good reasons. You need to ask: a) "what kind of pictures do I take with those lenses?" and b) "do I plan on taking a lot of that kind of picture on this trip?"

As for "low light" - the combination of the EM-5 and the 12mm f/2 works great in low light. I am a confirmed "available darkness" freak, and I am constantly amazed at how well this combo works in the dead of night.

If you put a gun to my head and said "one body, one lens - live with it" - it would be the EM-5 + 12mm f/2. Here's a recent shot from Parma:
