Reverse your thinking. If you're in M mode with Auto-ISO on, you're effectively controlling what Auto-ISO is doing with EC. This is exactly what I do, in many cases. By using the EC button instead of the ISO button, I can control everything without ever taking my eye off the viewfinder.
