I shoot Aperture mode with Auto ISO when the light is very bright. I find that this helps me not to blow highlights because the camera will automatically adjust shutter speed.

However most of the time, I shoot Manual mode with Auto ISO. This is particularly helpful in changing lighting conditions.

Nikon's implementation of Auto ISO is a fantastic tool that helps me get consistently good shots.

Last thing - about the only time that I turn off Auto ISO is when I am shooting in controlled lighting (portraiture with 2/3 speedlights) or when I am on the tripod for macro/landscape. In those instances, I am shooting in a very controlled manner and I also have the time to adjust my settings to taste.
